Shea partnered with an entrepreneurial team to develop a unique new salad concept that would work in multiple locations. The result was Sprout Salad Company, the new go-to healthy lunch option for the busy consumer in downtown Minneapolis’ RBC Plaza skyway. Shea created the entire urban garden concept from scratch, including name, branding, logo, interior design, and architecture. Highlights of the first location include a greenhouse inspired canopy that hangs above the food service line, as well as vibrant tile details that lead to the bold Sprout logo suspended on the back wood slat wall.
