Acclaimed chef Gavin Kaysen created a trifecta of Twin Cities restaurants with the opening of Demi, a 20-seat tasting-menu-only spot in Minneapolis’ historic North Loop neighborhood. And for a third time, he partnered with Shea to create a space as detailed and personal as the dishes served. A glittering bar and small, wood-paneled lounge area greet guests upon arrival, and an expansive U-shaped, wood-topped bar ensures that everyone has the chef’s table experience, as they watch their dishes cooked and plated in the open kitchen and on the central granite island. Custom artwork throughout the cozy, richly hued room pays homage to the building’s history as a coffee roastery, and the space is a true standout in concept and design–one that earned it a nomination for the 2020 James Beard Award for Best New Restaurant.
