Chef Gavin Kaysen has announced a return to Bellecour’s roots with an upcoming bakery and bistro location in Minneapolis’ North Loop, as well as the renovation of Edina’s current Cooks | Bellecour into a standalone Bellecour.
Bellecour began in 2016 as restaurant and bakery in Wayzata, MN. When the restaurant had to close during the pandemic, Kaysen and team partnered with Cooks of Crocus Hill to keep the brand alive, creating Cooks | Bellecour. While the new era for Bellecour brings an end to the partnership with Cooks of Crocus Hill on June 1st, the upcoming Bellecour locations mark the return to bakery & bistro’s roots — something Kaysen had always planned.
“Bellecour is and was always meant to be my love letter to France, to the chefs who have taught me, and to the city of Lyon where I visit often. While we had to take a detour the past five-years, I am excited to bring the cuisine I love to a neighborhood that has always been a strong supporter of what we have created,” said Kaysen.
Both the North Loop and Edina Bellecour locations are expected to open this fall. And, like the original, Shea is designing the spaces. We’re proud to have built a longtime partnership with Kaysen and team, having also previously partnered on Spoon and Stable, Demi and other ventures.
