Egg on a Roll is opening a second location in January, the team recently announced. The location is set to open in Minneapolis’ Dinkytown neighborhood in January, and the egg sandwich shop will feature a Shea design with bold patterns and pops of the brand’s signature blue color. Between the location’s grab-and-go style, online ordering technology and proximity to the University of Minnesota campus, Egg on a Roll sandwiches should grow to be a hit in its new market.
“The idea is that you’re going to be walking through campus and everybody’s going to have these little blue bags in their hands,” owner Adam Bresina told The Minnesota Daily.
