Bellecour

After partnering on the original Bellecour design and brand identity in 2017, acclaimed chef Gavin Kaysen teamed up with Shea to shape the French bakery and bistro’s next chapter with locations in Edina’s 50th and France neighborhood and Minneapolis’ North Loop. The North Loop location leans darker and more lived-in, featuring natural marble, dark woods, and unlacquered brass accents throughout, all with the intention to patina over time. Art and décor throughout the restaurant reflect Kaysen’s culinary journey, mentors, and French influences, blending personal history with a timeless spirit.

The Edina location is light, bright, and bakery driven, with gallery walls of framed art and personal photographs, hand-painted motifs, a 12-piece framed map of Place Bellecour in Lyon, France, plus planters and rattan dividers that add warmth and texture. Together, the two spaces carry Bellecour forward with French spirit, personal history, and the layered beauty of a concept ready for its next era.
