As the upscale-modern Mexican sister restaurant to Centro, Popol Vuh’s design is as refined as its food. Housed in a former glue factory, the full-service restaurant embraces elegant exposed brick, muted colors, and industrial elements, with a teal tiled bar and chef’s counter providing a bright punch of color to the space. The showpiece of the intimate 40-seat dining room is Popol Vuh’s open kitchen, which provides great culinary theater for guests—particularly the nine-foot wood-fire grill, which is the star of the show.
